Honey Cream Cake ("Medena Pita")

This is an amazing and light cake. Made with honey and lemons... Just enough sweetness. Its actually a European cake that my Grandma taught my sisters and I to make. My grandma calls it "Medena Pita" in Serbian. One time she made it for us and we asked for the recipe, but she said she wanted to show us how to make herself. So one freezing night (and i mean freezing like below 0!) We went and had bonding time with my grandma. And of course my Grandpa too:)
This is a make ahead dessert, which is pretty cool.



Ingredients for the Cake:

1 cup sugar
2  Eggs
2 tablespoons Honey
2 tablespoons Oil
1 teaspoon Baking Soda
1 teaspoon Vinegar
21/2 cups Flour


The Filling:

2 cups Milk
1/2 cup Cream of Wheat
1 cup Butter (room temp.)
1 cup Sugar
1 whole lemon
1 teaspoon Vanilla

Filling
I like to start off with the filling because the cream of wheat needs to be completely cooled. I keep it in the freezer while I make the cake.
Boil the milk and put the Cream of wheat in the boiling milk for about 1 min, and cool.
Beat the butter and sugar. Then add the cooled cream of wheat (it should be pretty dense, so you can break it up a bit). Zest the Lemon peel, and squeeze out the juice out of remaining lemon. Slowly add the lemon juice, vanilla, and lemon zest. Scrape down edges and beat well one last time. Divide into 3 parts.

Cake
Preheat Oven to 375 F.
Mix together the sugar, eggs, oil, and honey. Combine the Baking soda and vinegar into something small (my grandma used a shot glass). Once you combine the baking soda and vinegar, add it to the sugar, eggs, oil, and honey mixture. Then add the flour. Mix well. Divide it into four equal parts.
Flip a cookie sheet over so its upside down (this helps so you can slide the cake off easily) grease the sheet very well with Crisco (i like to use coconut oil) and dust with flour. Put one of the fourths of cake dough on a cookie sheet and roll out very thin into a square shape. Its a little difficult rolling it out, so you can use a piece of plastic wrap on top, and it helps keep it together while rolling it out. When you finish rolling it out use a fork and poke top of the cake every 2"
. Bake for 5mins or until brown. Do this with all four parts. These will be your layers.
With a flat knife scrape the cake off the sheet. Use one for the bottom layer and fill the other layers.

The Topping:
6oz of Semi Sweet Chocolate Morsels
3 tablespoons Milk
1 teaspoon of Oil

Melt together on a double broiler. And pour and smooth out on the top!
Let it sit about 24 hours in the fridge and the cake will become soft so you can cut it. So delicious! Enjoy:)

Man we are like swamped with summer plans...! tomorrow is our cousins wedding!! And we are SOOOO super excited and happy for her:) So obviously we are going out with all the girls from out of town who are here for the wedding:) do we should be having a LOT of fun:) Thought i'd share this pic... love the style mix:)

clothes swap





Over the weekend my sisters and I called all our girlfriends over and had a clothes swap! haha it was so much fun! And we spent the morning cooking, baking and cleaning:) It was a lot of fun making the fancy and special desserts. I made a  gluten free chocolate raspberry cake and steph made some fancy pineapple vanilla dessert cracker they were amazing! So all the girls started showing up around 3:30 and we just relaxed and hung out till 10:00!! It was so much fun just to have all our friends over and chill out for a little bit:)

back

Our internet has been acting up lately... And I have barley been living without the internet working! I know that sounds dramatic but its hard! haha I guess you don't know what you have until you loose it. so we got the internet up and running a couple days ago:) I was really excited about that (you can imagine)! So tonight we are having all our girl friends over and having a clothes swap:) I think its gonna turn out fun. We are making fun and fancy desserts and appetizers:) So I'm gonna be making that chocolate cake I put on here before, but instead of filling it with coconut chocolate filling, I'm going to fill it with a raspberry filling!!! WOOO HOOO! Cant wait for that!:) Btw I am super obsessed with lace... lace dresses lace nails lace anything!!

no time...

It has been such a busy year for me and my family! I cant remember the last time we were all  relaxed. i cant wait for summer to come cause it seems to calm me! lol i dont know... it must be the warm weather or the sun shining or the kids laughing and playing outside. but I am here, running through life full speed!

gluten free

Stephanie and I decided to go gluten free a couple weeks ago, and its kinda hard when you don't have the right ingredients for everything. So on Saturday I dragged savannah to seven grains first thing in the morning and I got all the ingredients for a chocolate cake:) I was so happy! So here is my first real gluten free cake I made. Ugh it was so good!

summer?

Man! It is beautiful today! Believe it or not I'm in short sleeves! I woke up this morning took a shower and went down to the basement and brought up my summer clothes! haha It feels so good!! It is still a little chilly right now in the morning but it is supposed to be around 73 degrees! YAY! But over the weekend the kids were messing around and they saw this video on youtube! Check it out. I  was dieing laughing when I saw it but maybe that's cause i was slap happy;)
